Founded in February 2020, Never Enough Bake Shop is a locally owned bakery based in Mystic, Connecticut. What began as a Cottage Food Law operation has grown into a beloved destination for handcrafted pastries, desserts, and baked goods created with passion, creativity, and professional expertise.
Owner and Pastry Chef Aimee Filippetti is a proud Mystic native and graduate of the Culinary Institute of America. She earned her Associate Degree in Baking and Pastry Arts in 2015, followed by a Bachelor's Degree in Food Business Management with a concentration in Advanced Baking and Pastry in 2016. Continuing her commitment to education and excellence, Aimee completed her Master's Degree in Wine and Beverage Management in 2025.
In October 2020, Aimee and her mother purchased the Bleu Squid in Olde Mistick Village. In 2023, they transformed and reimagined the business as toast + tonic creative kitchen, where Never Enough Bake Shop now proudly operates.
Growing up in Mystic, Aimee always knew she wanted to share her love of baking with the Southeastern Connecticut community. Today, Never Enough Bake Shop reflects that vision—offering thoughtfully crafted baked goods made with quality ingredients, attention to detail, and a genuine passion for bringing people together through food.
